| Production Method | The whiskey is double distilled in two artisanal “Artisanaz” copper pot stills, enhancing its flavor and character by removing impurities and refining the spirit. The process has a maximum output of 4-5 barrels a day. Our 'low and slow' approach to the fermentation process starts with a clean wash and a low fermentation temperature. The whiskey is then aged in wine barrels, which impart unique flavors from the wine residuals and wood, adding layers of complexity. The rich, malty character of the whiskey, derived from malted barley, is complemented by nuanced notes such as ripe fruits, berries, and spices from the wine barrels. Arizona's climate accelerates the aging process, intensifying the interaction between the whiskey and the barrels. |
