When The Block Distilling Co. set out to make gin we quickly came to realize there were too many amazing botanicals, citrus, and spices to play with. How could we restrict ourselves to just one gin? We didn't. We created four, with each being The Block's expression of the season. Starting with The Block Vodka as a base the botanicals are macerated at room temperature to ensure we only extract the best of the flavors.
With our Winter Gin we wanted to create a true cold weather spirit. Something that can be sipped on the rocks or hold up in a hot toddy. That desire led us to barrel aging. So, we take the Autumn Gin and rest it in brand new, charred, American white oak barrels for a minimum of six months. The oak barrel adds the amber color to the spirit as well as sweet notes like vanilla, caramel, and brown sugar. Add those notes to the clove, peppercorn, cinnamon, and allspice of the Autumn Gin recipe and the resulting Winter Gin is a true hybrid spirit that can hold up in both gin and whiskey cocktails. Use it in a hot toddy or an old fashioned with equal level of deliciousness.

5 | Strain the cocktail over the ice. |
6 | Garnish with a expressed orange peel. |
