Instead of traveling to Kentucky for this selection, the tasting came to us. A beautiful kit was mailed to us, which included three barrel options, fresh limestone filtered water (like you would find at the distillery), and a graduated cylinder. This selection would become a beautiful blend of science and magic, resulting in the Single Barrel Select Rye you see before you. First and foremost, I love the golden honey hue of this pour. As you admire this beautiful color, the aromas of this Rye will greet you with a nose full of brown sugar, graham cracker, and honey with a clear hint of that Rye. This leads to flavors of warm rye bread, oak, and caramel. The finish combines rye spice, leather, and cinnamon sugar.

KOVAL has quickly become one of my favorite modern distilleries, and this single-barrel Rye beautifully represents a few reasons why. In learning their story, you'll discover that their approach to distillation leverages learnings from family tradition, which focuses on using the heart cut. Many of their releases use 100% of a single grain, in this case, Rye, to truly let the virtues of that grain shine. Their style in design and final product take center stage in the bottle and the glorious liquid it carries.

Whether you are new to rye whiskey or simply looking for something new, this pour has something for everyone to behold. The nose offer is grain forward with hints of green apple, caramel, and cinnamon.
