      Beyond the Label

      Mezcal Los Javis Tepeztate is made from hand-selected Tepeztate maguey which takes between 25 to 35 years to mature before cultivation. The artisanal production follows a traditional path from stone oven roasting and tahona stone milling to naturally fermenting in wooden vats and distilling in small copper pots.

      1 oz. Los Javis Mezcal
      1 oz. Grapefruit juice
      1/2 oz. Simple syrup
      1 dash Bitters
      Steps
      1 Combine all ingredients, except the sparkling wine, and stir with ice.
      2 Strain into glass and top with sparkling wine.
