      Beyond the Label

      Lapin Rouillé Rosé Brut Champagne is the sister expression of the delicious Non-Vintage Brut, produced using only 100% Pinot Meunier grapes from a small, single estate grower in the countryside just outside Reims, the sparkling city in the Champagne region. Boasting the distinctive balance of berries, spring flowers, and gentle salinity, this is a champagne with a beautiful blushing glow to it.

      Offered up in a smooth pearl white wrapped bottle, topped with a scarlet foil, and with the inimitable rabbit medallion, the delicious rosé Brut is secluded from view until it's poured. An unforgettable way to celebrate a sunny Summer's day.

      Varietal Type: 100% Pinot Meunier

      Sub Appellations: North west of Reims, the “Massif de Saint-Thierry”

      Storage Time: Ready to drink now, but it will evolve after around 3 years of cellaring

      Serving Temperature: 7-8 °C (44-46 °F)

      Vinification: The Brut Rosé NV is 100% Pinot Meunier harvested from six different parcels. It is made by combining 21% red wine with 79% white wine from Pinot Meunier (blanc de noir). The juice is fermented in stainless steel tanks and an assemblage is made that includes 20% reserve wine from the previous vintage. The wine goes through a malo-lactic fermentation and then rests “sur lattes” for a minimum of 3 years. This Rose Champagne is finished with a dosage of 0g/l.

      Ready to drink, but it can age for further 2–5 years.

      Color

      This Rosé Brut Champagne boasts a sustained raspberry pink color, with salmon reflections nuanced with orange-pink. It is fresh and lively with a persistent stream of fine bubbles.

      Nose

      The nose of this cuvée is immediately offers up the scent of strawberries, embellished with finer notes of rhubarb, pink grapefruit, paprika and blood orange. It evolves into almond, lime blossom, praline and fig. After a bit of breathing it opens up and it gives us notes of minerality and limestone, mixed with blackcurrant, sour cherries and a gentle herbal note.

      Palate

      It is fresh on the palate with a fine texture and a smooth and creamy effervescence. The wine opens up reflecting the red berry and citrus fruits from the nose. The rich red fruit is well balanced by an elegant and zesty acidity. The saline and iodized mineral purity reinforces the freshness of the peppermint that lingers on the finish with the strawberry, leaving a long lasting appetising sensation.
