      Beyond the Label

      There is no more Irish a whiskey than Pot Still, so we felt it was fitting to age it in Irish Oak. We at Glendalough Distillery are proud to play our part in bringing back the use of Irish oak for whiskey cask-making. Each bottle is numbered and traceable to each cask and even to the tree from whence it came.

      This most quintessentially Irish style of whiskey, pot still, is first matured in ex-bourbon casks, then in Irish Oak felled in the mountains around the distillery. While the bourbon cask softens and sweetens the whiskey, the higher levels of flavor in Irish oak complement and balance the classic pot still spices.

      Tasting Notes

      Nose

      Sweet and citrus with vanilla, caramel, banana, treacle notes followed with earthy & herbal undertones of oak spices and leather.

      Taste

      Chewy, warm and buttery, pot still malt and spices precede; toffeed pears, treacle, cinnamon, nutmeg and distinctive toasted, tannic oak and grapefruit.

      Finish

      A long finish with creamy vanilla, almond, forest fruit and toasted Irish oak.

      Make a Cocktail

      Pot Still Highball

      Ingredients
      1.5 oz. Pot Still Whiskey
      3 oz. Soda Water
      1 Grapefruit skin and some fresh mint
      Steps
      1 Take a tall glass and fill it to the brim or beyond with ice.
      2 Pour in the Glendalough Pot Still and top with soda water.
      3 Garnish with a grapefruit skin to complement the woody tannins and spices in the whiskey and a sprig of fresh, slapped mint.
