Ayuuk is an uncategorized spirit, showcasing the smoky Pasilla Mixe chili as the sole botanical and primary source of all the complexity.
Sourced directly from Mixe farmers in the mountains of Oaxaca, Mexico, the chilis are traditionally grown and processed to reveal their distinctive fruity, and smoky layers with a hint of salinity. The Pasilla Mixe chilis are macerated in a Danish heritage purple wheat and pilsner malt vacuum-distilled spirit. After vacuum distillation the best fractions are rested in an Oloroso sherry cask, allowing the flavors to infuse and mature with each other, for a smooth, distinct, and savory finish.
Mashbill: Ayuuk uses a mash of Pilsner malt (85%) and purple wheat (15%), fermented with Belgian Saison yeast.
Age: 1 month
• Only natural ingredients.
• Everything made from scratch.
• No sugar added.
• Conceived in Copenhagen, Denmark.
• Vegan
Serve Over ice, with grapefruit soda and a squeeze of lime for the perfect Paloma, or in a Margarita for a smoky twist on the classic. Alternatively, serve simply with ice and Ginger Beer.
